Cooking Fish Smoked tuna, olive and lemon pasta

In less than 30 minutes you can produce this healthy and hearty tuna pasta meal that the whole family will love.

  1. Cook the pasta in a large saucepan of salted boiling water according to packet instructions or until al dente. Drain and keep warm.
  2. Meanwhile, heat the oil in a large non-stick frying pan over medium heat. Add the onion and cook for 4 minutes or until softened. Add the garlic and lemon rind and cook for another 1-2 minutes.
  3. Add the cooked pasta to the pan, along with the olives, lemon juice, tuna and parsley. Season with salt and cracked black pepper.
  4. Gently toss until well combined and cook for another 2-3 minutes or until warmed through. Divide between serving bowls and serve with shaved parmesan and a simple salad.
