In less than 30 minutes you can produce this healthy and hearty tuna pasta meal that the whole family will love.
- Cook the pasta in a large saucepan of salted boiling water according to packet instructions or until al dente. Drain and keep warm.
- Meanwhile, heat the oil in a large non-stick frying pan over medium heat. Add the onion and cook for 4 minutes or until softened. Add the garlic and lemon rind and cook for another 1-2 minutes.
- Add the cooked pasta to the pan, along with the olives, lemon juice, tuna and parsley. Season with salt and cracked black pepper.
- Gently toss until well combined and cook for another 2-3 minutes or until warmed through. Divide between serving bowls and serve with shaved parmesan and a simple salad.
