Keep your shopping ingredients to a minimum and enjoy this maximum-flavoured prawn noodle salad.
- Prepare noodles following packet directions. Transfer to a large bowl.
- Meanwhile, heat a large frying pan or wok over high heat until just smoking. Spray with oil. Stir-fry the prawns for 4-5 minutes or until prawns curl and change colour.
- Add the prawns, capsicum, shallot and coriander to the noodles. Toss to combine. Divide among serving bowls.
