This versatile Thai dressing can be used for any salad, but it tastes especially good with our prawn and noodle version.

  1. To make the dressing, combine the lime and lemon juice, coriander, oil, fish sauce, sugar, ginger and chilli in a bowl.
  2. Place the noodles in a heatproof bowl and cover with boiling water. Set aside for 3 minutes to soften. Use 2 forks to separate noodles. Drain well. Place the noodles in a large bowl.
  3. Add prawns, Asian greens, peanuts and dressing to the noodles and gently toss until well combined. Spoon among serving bowls and serve immediately.
