This versatile Thai dressing can be used for any salad, but it tastes especially good with our prawn and noodle version.
- To make the dressing, combine the lime and lemon juice, coriander, oil, fish sauce, sugar, ginger and chilli in a bowl.
- Place the noodles in a heatproof bowl and cover with boiling water. Set aside for 3 minutes to soften. Use 2 forks to separate noodles. Drain well. Place the noodles in a large bowl.
- Add prawns, Asian greens, peanuts and dressing to the noodles and gently toss until well combined. Spoon among serving bowls and serve immediately.
