Serve up a crisp winter salad with this fennel, bean and radicchio combination.
- Place radicchio, fennel, beans, onion, lemon juice, oil and basil leaves in a bowl. Season with salt and pepper. Toss to combine. Serve.
Radicchio, fennel and borlotti bean salad
- 1 radicchio lettuce, trimmed, leaves torn
- 2 baby fennel bulbs, trimmed, thinly sliced
- 400g can borlotti beans, drained, rinsed
- 1 small red onion, halved, thinly sliced
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1/4 cup small fresh basil leaves
