Darjeeling tea is a delicate and aromatic black tea from North East India. If you cant find it, use a good-quality loose-leaf black tea instead.
- Preheat the oven to 100C/80C fan forced. Place a wire rack over a large baking tray.
- Place the orange slices on the prepared rack. Bake, turning the slices every 20 minutes, for 2 hours or until dried. Set aside to cool completely.
- Place the cardamom, cinnamon, star anise, cloves, allspice, fennel and coriander in a frying pan over medium heat and cook, stirring, for 3-4 minutes or until aromatic. Set aside to cool.
- Combine the spice mixture, orange and tea in a bowl. Divide among airtight containers or tea bags and wrap up as a gift.
