Enjoy a hot cup of chai with all the comforting spices and aromas of the traditional.
- Using a mortar and pestle, (see note) pound peppercorns, cloves and cardamom pods until lightly crushed. Place peppercorn mixture, tea, vanilla and cinnamon in a saucepan. Add 1 cup cold water. Bring to the boil over medium-high heat. Reduce heat to medium. Add milk.
- Simmer for 3 minutes or until aromatic. Strain mixture into a saucepan over medium-low heat. Add sugar. Cook, whisking, until mixture is frothy. Pour into glasses (see note). Sprinkle with nutmeg. Serve.
