Cooking Fish Nicoise sandwich

Pack a picnic basket with this tasty, low-fat tuna nicoise sandwich.

  1. Place eggs in a medium saucepan. Cover with cold water. Bring to the boil over high heat, stirring occasionally (this helps the yolks stay centred). Reduce heat to medium. Simmer for 5 minutes for a medium boiled egg. Drain. Refresh under cold water. Peel. Thickly slice.
  2. Gently toss tuna and dressing together in a bowl. Place 4 slices of bread on a flat surface. Top with cucumber, tomato, tuna mixture and egg. Sandwich with remaining bread slices. Cut in half. Serve.
