This sweet apple salad is a perfect compliment to the honey mustard pork.
- Preheat the oven to 220C. Line a baking tray with baking paper.
- For the apple and mustard salad, core the apple and thinly slice. Cut the slices into matchsticks and combine in a bowl with the lemon juice. Top with the witlof and chopped parsley, then cover and refrigerate until required.
- Combine the honey, mustard powder, ginger and coriander in a small bowl with 2 teaspoons sea salt. Place the pork fillet on prepared tray, spread mixture over top of the pork and roast for 16-18 minutes or until browned all over. Remove from the oven, cover loosely with foil and rest for 10 minutes.
- Meanwhile, add the wholegrain mustard and mayonnaise to the salad and toss until well combined, season to taste with sea salt and freshly ground black pepper.
- Divide the salad between serving plates and top with slices of pork.
