Its hard to resist these sticky, smoky pork ribs served with sweet mango salsa.
- To make the marinade, combine the barbecue sauce, tomato paste, vinegar, sugar, paprika, garlic and 2 tsp sea salt in a bowl. Add ribs, turn to coat, then cover and chill for at least 2 hours.
- Preheat oven to 160C. Drain the ribs, reserving the marinade. Place ribs in a large roasting pan, cover with foil and cook for 1 hour. Remove foil and increase heat to 200C. Add 1/4 cup (60ml) water to the pan and baste the ribs with reserved marinade.
- Cook for a further 50 minutes, scraping the bottom of the roasting pan with a wooden spoon and basting the ribs with caramelised pan juices every 10-15 minutes.
- Meanwhile, place mango, capsicum and coriander in a bowl and toss to combine.
- Slice ribs, brush with any remaining pan juices and serve with mango salsa.
