Cooking Meat Smoky pork ribs with mango salsa

Its hard to resist these sticky, smoky pork ribs served with sweet mango salsa.

  1. To make the marinade, combine the barbecue sauce, tomato paste, vinegar, sugar, paprika, garlic and 2 tsp sea salt in a bowl. Add ribs, turn to coat, then cover and chill for at least 2 hours.
  2. Preheat oven to 160C. Drain the ribs, reserving the marinade. Place ribs in a large roasting pan, cover with foil and cook for 1 hour. Remove foil and increase heat to 200C. Add 1/4 cup (60ml) water to the pan and baste the ribs with reserved marinade.
  3. Cook for a further 50 minutes, scraping the bottom of the roasting pan with a wooden spoon and basting the ribs with caramelised pan juices every 10-15 minutes.
  4. Meanwhile, place mango, capsicum and coriander in a bowl and toss to combine.
  5. Slice ribs, brush with any remaining pan juices and serve with mango salsa.
