Send your tastebuds on a trip to the Deep South with these classic, smoky American barbecued ribs.

  1. Preheat oven to 160C. Place ribs in a large, deep roasting pan. Pour over enough boiling water to cover ribs, then cover pan with foil and roast for 1 hour. Remove ribs. Pat dry with paper towel.
  2. Meanwhile, to make sauce, blend all ingredients in a blender until smooth. Transfer the mixture to a heavy-based saucepan and simmer over medium heat, stirring occasionally, for 45 minutes or until thick and reduced by half. Refrigerate until needed or for up to 1 month in a sterilised jar. Makes 1L.
  3. Preheat a barbecue to medium. Brush ribs with 1 cup (250ml) barbecue sauce and place, curved-side up, on barbecue. Close the barbecue and cook ribs for 10 minutes. Turn ribs over, brush with 1/2 cup (125ml) sauce and cook, covered, for a further 5 minutes or until browned.
  4. Serve with remaining barbecue sauce, barbecued corn cobs and chat potatoes.
