Pork and apples are a classic combination in this tasty recipe.

  1. Cook rice following packet directions. Stir in snow peas and coriander leaves. Stand, covered, 5 mins.
  2. Meanwhile, heat oil in a large frying pan over high heat. Cook pork for 3 mins each side or until just cooked through. Transfer to a plate. Cover to keep warm.
  3. Add apple juice, ginger, soy sauce and stock cube to the frying pan. Cook, stirring, for 5 mins or until glaze thickens.
  4. Arrange pork in a serving dish and drizzle with sauce. Top with coriander sprigs and serve with beans and the rice mixture, sprinkled with chilli, if desired.
