Apple and mint sauce and succulent roast pork are a match made in heaven.

  1. Cut apples into large chunks. Place apples, sugar and 1/4 cup water in a small saucepan over medium-low heat. Stir apples until sugar has dissolved, then simmer for 3-4 minutes or until apples are soft but still holding shape. Stir in the lemon juice, mint, salt and pepper. Refrigerate until ready to serve.
