We all need some more 'me' time, so lets get this juicy pork chop dinner on the table in a flash — then relax!
- Place pork in a glass or ceramic dish. Rub both sides of pork with sugar. Heat oil in a large, non-stick frying pan over medium-high heat. Cook pork for 1 minute each side or until golden and caramelised. Reduce heat to medium. Cook for 2 to 3 minutes each side or until cooked through. Transfer pork to a plate. Cover. Set aside for 5 minutes to rest.
- Meanwhile, add apple and tomatoes to pan. Cook, turning apples, for 5 minutes or until tender.
- Make balsamic dressing: Place oil, balsamic vinegar and mustard in a screw-top jar. Season with salt and pepper. Secure lid. Shake to combine.
- Place salad leaves in a bowl. Drizzle with balsamic dressing. Toss to combine. Place pork on plates. Top with apple, tomatoes and salad leaves. Serve.
