Cooking Vegetarian Fossil footprint fixtures

Party like its 200 million BC with these dinosaur footprint fritters.

  1. Place potato in a large saucepan. Cover with cold water. Bring to the boil over high heat. Boil for 12 to 15 minutes or until potato is tender. Drain. Transfer to a bowl. Mash potato until smooth. Stand for 10 minutes to cool.
  2. Add baking powder and 40g butter to potato. Stir to combine. Add salt, flour, cheese, onion and corn. Stir until just combined (don’t over-mix). Roll 1/4 cup mixture into a ball. Place ball on a lightly floured surface. Flatten ball until 1cm thick. Cut out and flour the template, then press firmly onto round to make an imprint. Place on a baking tray lined with baking paper. Repeat with remaining mixture, flouring the template between each use.
  3. Melt a little of the remaining butter in a frying pan over medium heat. Cook fritters, in batches, imprint side up first, for 2 to 3 minutes each side or until golden, adding remaining butter when needed. Transfer to a baking tray lined with paper towel to drain. Season with salt and pepper. Serve immediately.
