Fusilli is the perfect pasta for this salad because the creamy dressing sits in the spirals, making each bite especially delicious.

  1. Cook pasta in a large saucepan of boiling, salted water, following packet directions, until tender. Drain. Rinse under cold water. Drain well. Set aside to cool.
  2. Place chicken, peppers, onion, avocado, spinach and pasta in a large bowl.
  3. Combine mayonnaise, lemon juice and thyme in a small jug. Season with salt and pepper. Drizzle salad with dressing. Toss gently to combine. Serve.
