This easy gathering of greens takes zing from lemon, smoothness from sour cream and mayo, and a slight bite from blue cheese and mustard.

  1. Place the sour cream, blue cheese, mayonnaise, lemon juice and mustard in the bowl of a food processor and process until just smooth. Season with pepper.
  2. Place the rocket, spinach, endive and sour cream mixture in a large bowl and gently toss until just combined. Serve.
