Make over the fruit salad with a sticky sweet syrup spiked with rum.
- Use a melon baller to scoop balls from the watermelon, honeydew melon and rockmelon. Place in a bowl.
- Stir the ginger, sugar, rum and water in a small saucepan over medium-low heat for 2-3 minutes or until sugar dissolves. Bring to the boil. Reduce heat to low. Simmer for 10 minutes or until syrup thickens. Set aside for 5 minutes to cool.
- Pour the ginger syrup over the melon mixture. Set aside for 5 minutes to infuse. Serve with the yoghurt.
