Lemon syrup cakes

Cooking Appetiziers Lemon syrup cakes

A sponge cake made extra moist and sticky by the addition of lemon syrup.

  1. Preheat oven to 190C or 170C fan-forced.
  2. Place all ingredients, except those for syrup, into a bowl and mix with wooden spoon until smooth.
  3. Grease a 6-hole Texas muffin pan. Place 1/3 cup of mixture into each hole. Bake for 20 mins. Stand for 5 mins turn out onto a wire rack. Drizzle with syrup while warm.
  4. Syrup: Mix juice and sugar in a small saucepan and cook over medium heat for 5 mins until slightly thickened.
