This fresh fruit salad is a perfect dessert on those hot summers days.

  1. Peel the mandarins. Use your fingers to carefully separate the segments and remove the fibrous white strands from each. Place the segments in a bowl with the lychees and set aside.
  2. Place the reserved lychee syrup in a small saucepan and bring to the boil over medium-high heat. Reduce heat to low and simmer, uncovered, for 15 minutes or until the syrup is reduced to about 80ml (1/3 cup). Pour over the mandarin segments and lychees.
  3. Add the mint to the fruit and gently toss to combine. Set aside for 30 minutes to macerate before serving with the yoghurt.
