This spicy syrup adds an exotic twist to a healthy fruit platter.
- Place caster sugar, cinnamon stick, star anise, vanilla pod and seeds, ginger and 2 cups water in a medium saucepan. Stir over low heat until the sugar has dissolved. Bring to the boil and simmer for 8 minutes. Set aside to cool. Strain and reserve the liquid. Discard the spices.
- Meanwhile place honeydew, pineapple, and rockmelon in a large serving bowl. Pour over the syrup. Place in the fridge for 1 hour, stirring occasionally.
- To serve, divide among serving glasses.
