For the perfect accompaniment to a summer meal, whip up this crunchy salad.
- Using a vegetable peeler, peel cucumbers lengthways to form long thin ribbons. Discard excess seeds. Place cucumber ribbons into a bowl. Thinly slice radishes into rounds. Cut into thin strips. Add to cucumber with mint, snow peas and sprouts. Cover. Refrigerate until required.
- Combine lime juice, oil, and salt and pepper in a jug. Whisk to combine. Add dressing to salad just before serving. Toss until well combined. Serve.
