  1. Chuck your oven on to 200°C or 180°C fan forced. Throw a bit of olive oil on your beef and give it a quick sear in a non-stick fry pan. One or two minutes should do the job. Plop it into an Easy Grab 1.9L Pyrex Oblong Baker and spread the mustard evenly over the top and sides of the beef.
  2. Bung your beef into a preheated oven and roast until it’s roughly medium rare. The easiest way to test this is to get yourself a Pyrex Digital Thermometer. Just give it a quick poke and look for a number between 60°C and 65°C. It should take about 20-25 minutes. Take the whole lot out, throw it on a plate and wait for about 10 more minutes, unless you're starving.
  3. Cook sugar snap peas in a medium saucepan of boiling water for 3 minutes. Rinse with cold water and drain.
  4. If you haven't already tucked in, thinly slice beef and pop it in a large bowl with the sugar snap peas, rocket and tomatoes, before dividing it up to serve. If you're feeling fancy, drizzle a little balsamic over the whole lot. Dig in.
