For a speedy Asian dinner with a difference try this Crispy beef in egg nets recipe.

  1. Combine the egg and 2 tbsp water in a jug. Heat a non-stick frying pan over medium-high heat. Add 1 tsp of the oil. Swirl to coat. Drizzle one-quarter of the egg mixture back and forth over the pan to form a criss-cross pattern. Cook for 1 min or until egg sets. Carefully transfer to a plate. Cover to keep warm. Repeat with remaining egg mixture to make 4 omelettes.
  2. Heat remaining oil in a large frying pan over high heat. Add mince. Stir-fry for 3 mins or until mince has just changed colour. Add garlic and ginger. Stir-fry for 1 min. Add kecap manis and stir-fry for 2 mins. Add vegetables to pan. Stir-fry for 1 min or until just tender. Stir in chopped coriander and chilli.
  3. Place 1 omelette on a plate. Spoon one-quarter of the mince mixture over one-half of the omelette and fold to enclose. Repeat with remaining omelettes and mince mixture. Drizzle omelettes with extra kecap manis. Top with coriander sprigs and bean sprouts. Serve with rice, lime wedges and extra chilli.
