Onion-flecked mash with pepper-rubbed pork make Mondays meal a sure-fire hit.

  1. Place the pork in a large shallow glass or ceramic bowl. Add the oil and pepper, and turn to coat. Cover with plastic wrap and place in the fridge.
  2. Bring a large saucepan of water to the boil. Add the potato and cook for 15 minutes or until tender. Drain and return to the pan. Use a potato masher to mash until smooth. Add the sour cream, onion and milk, and stir until well combined. Taste and season with salt and pepper.
  3. Meanwhile, heat a large non-stick frying pan over medium-high heat. Add the pork and cook for 5-8 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover with foil to keep warm.
  4. Bring a medium saucepan of water to the boil. Add the beans and cook for 2 minutes or until bright green and tender crisp. Drain.
  5. Divide the mash and beans among serving plates. Top with the pork and drizzle over any juices from the plate. Serve immediately.
