Onion-flecked mash with pepper-rubbed pork make Mondays meal a sure-fire hit.
- Place the pork in a large shallow glass or ceramic bowl. Add the oil and pepper, and turn to coat. Cover with plastic wrap and place in the fridge.
- Bring a large saucepan of water to the boil. Add the potato and cook for 15 minutes or until tender. Drain and return to the pan. Use a potato masher to mash until smooth. Add the sour cream, onion and milk, and stir until well combined. Taste and season with salt and pepper.
- Meanwhile, heat a large non-stick frying pan over medium-high heat. Add the pork and cook for 5-8 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover with foil to keep warm.
- Bring a medium saucepan of water to the boil. Add the beans and cook for 2 minutes or until bright green and tender crisp. Drain.
- Divide the mash and beans among serving plates. Top with the pork and drizzle over any juices from the plate. Serve immediately.
