Here is the good news for those of us who are watching our weight - this family favourite recipe has been adapted to be low-fat and low-kilojoule.

  1. Heat a frying pan over a high heat. Add wet spinach. Cook for 1 minute until wilted. Remove and set a side. Spray the pan with oil. Cook chicken for 2 minutes each side or until golden.
  2. Preheat oven to 180°C. Pour the tomato into a 2 litre oven proof dish. Stir through garlic an d oregano and spread over base of dish.
  3. Place the chicken in a single layer on top of the tomato mixture. Place a slice of ham on top, tucking in the edges neatly. Top with the spinach, then mozzarella. Bake for 15-20 minutes until the cheese has melted. Season with pepper.
