Creamed spinach with currants

Cooking Vegetarian Creamed spinach with currants

With leafy spinach and sweet currants, this quick and tasty side dish will become an instant family favourite!

  1. Heat oil in a large frying pan over medium-high heat. Add onion, garlic and currants. Cook, stirring, for 2 to 3 minutes or until onion has softened. Add spinach. Cook, stirring, for 2 to 3 minutes or until spinach starts to wilt.
  2. Add cream. Season with salt and pepper. Bring to the boil. Reduce heat to medium. Simmer for 1 minute or until spinach has wilted and mixture thickens slightly. Serve.
