This spicy salsa is the perfect accompaniment to smoked salmon, poached chicken breast or grilled white fish.
- Combine dill, gherkin, onion, lemon rind, lemon juice, oil and salt and pepper in a bowl. Serve.
Dill, gherkin and red onion salsa
- 1 tbsp finely chopped fresh dill sprigs
- 6 medium gherkins, drained, halved lengthways, sliced
- 1/2 small red onion, finely chopped
- 1/2 tsp finely grated lemon rind
- 2 tsp lemon juice
- 1 tsp olive oil
