Pickled pork with stewed apple

This perfect pairing of pickled pork and sweet stewed apples is sure to become a family favourite.

  1. Stir the sugar, vinegar and 1/2 cup (125ml) water in a saucepan over a medium heat until the sugar dissolves. Bring to the boil. Add the apples and cook for 10 minutes or just tender. Set aside until required or for up 6 hours.
  2. Remove pork from packaging. Place pork in a large saucepan and cover with cold water. Bring to the boil and reduce the heat and simmer for 45-50 minutes or until cooked through. Drain.
  3. Meanwhile, preheat oven to 180°C. Place carrots, parsnip and potatoes in a baking dish. Drizzle over the oil and bake for 35 minutes or until tender.
  4. Serve slices of the pork with the roast vegetables and apples and syrup.
