  2. Meanwhile, melt half the butter in a large frying pan over medium heat. Cook pork for 2 to 3 minutes each side, or until cooked through. Transfer to a plate. Cover to keep warm.
  3. Add honey, mustard and remaining butter to pan. Stir to combine. Reduce heat to low. Add carrot and parsnip. Cover. Cook for 2 to 3 minutes or until tender. Divide carrot and parsnip between plates. Top with pork. Serve with rocket leaves.
