Butter bean and vegetable patties

Cooking Vegetarian Butter bean and vegetable patties

These vegetarian patties are delicious with a dollop of tzatziki and a squeeze of lemon.

  1. Cook potato in a large saucepan of boiling water for 8 to 10 minutes, adding peas for last 2 minutes of cooking time. Drain. Return potato and peas to pan. Add beans. Mash until almost smooth. Set aside to cool.
  2. Add relish, cheese and egg. Season with salt and pepper. Using 1/3 cup mixture per ball, roll mixture into 12 balls. Flatten slightly. Place breadcrumbs on a plate. Coat patties in breadcrumbs. Place on a plate. Refrigerate, covered, for 30 minutes.
  3. Heat oil in a frying pan over medium-high heat. Cook patties, in batches, for 2 to 3 minutes each side or until golden and heated through. Transfer to a plate lined with paper towel. Serve with tzatziki and lemon wedges.
