These vegetarian patties are delicious with a dollop of tzatziki and a squeeze of lemon.
- Cook potato in a large saucepan of boiling water for 8 to 10 minutes, adding peas for last 2 minutes of cooking time. Drain. Return potato and peas to pan. Add beans. Mash until almost smooth. Set aside to cool.
- Add relish, cheese and egg. Season with salt and pepper. Using 1/3 cup mixture per ball, roll mixture into 12 balls. Flatten slightly. Place breadcrumbs on a plate. Coat patties in breadcrumbs. Place on a plate. Refrigerate, covered, for 30 minutes.
- Heat oil in a frying pan over medium-high heat. Cook patties, in batches, for 2 to 3 minutes each side or until golden and heated through. Transfer to a plate lined with paper towel. Serve with tzatziki and lemon wedges.
