Cooking Vegetarian Blue cheese toasties

When you feel like something a little bit special for lunch try these tasty blue cheese toasties.

  1. Combine the blue cheese and cheddar in a bowl. Spread over 2 wraps. Top each with another wrap to make a stack. Heat the oil in a frying pan over medium-high heat and fry each stack for 3 mins each side or until crisp. Transfer to a plate lined with paper towel. Cut each stack into 8 pieces.
  2. Combine the spinach, tomato, avocado and pine nuts in a bowl. Drizzle over the dressing. Serve with the toasties.
