The most delicious way to eat your greens!

  1. Cook snow peas and sugar snap peas in a medium saucepan of salted boiling water for 2-3 minutes or until bright green and tender crisp. Refresh under cold running water. Drain well.
  2. Whisk together the lemon juice and oil in a small jug. Season with salt and pepper.
  3. Combine the rocket, snow peas and sugar snap peas in a large serving bowl. Drizzle with the lemon dressing and gently toss to combine. Serve immediately.
