Avocado salad with orange vinaigrette

Bring in the season of Spring with this fresh avocado salad with citrus vinaigrette.

Finely grate rind from orange. Peel orange and segment (see note). Squeeze membrane over a bowl to catch juice (you will need 2 tablespoons juice). Discard membrane.
Place oil, vinegar, mustard, 1/2 teaspoon orange rind and orange juice in a screw-top jar. Season with salt and pepper. Secure lid. Shake to combine.
Place salad leaves, cucumber, orange segments and avocado in a large bowl. Add vinaigrette. Toss gently to combine. Serve.

1 tbsp white wine vinegar

1 tsp wholegrain mustard

80g mixed salad leaves

1 small continental cucumber, cubed

1 medium avocado, halved, sliced
