Bring in the season of Spring with this fresh avocado salad with citrus vinaigrette.
- Finely grate rind from orange. Peel orange and segment (see note). Squeeze membrane over a bowl to catch juice (you will need 2 tablespoons juice). Discard membrane.
- Place oil, vinegar, mustard, 1/2 teaspoon orange rind and orange juice in a screw-top jar. Season with salt and pepper. Secure lid. Shake to combine.
- Place salad leaves, cucumber, orange segments and avocado in a large bowl. Add vinaigrette. Toss gently to combine. Serve.
