Use up leftover turkey in this colourful salad using zesty, sweet oranges and rocket.
- Make Orange Vinaigrette. Place oil, vinegar, orange juice and mustard in a small bowl. Season with salt and pepper. Whisk until combined.
- Peel oranges, removing white pith. Slice oranges into rounds. Place turkey, rocket, olives, onion, parsley and orange slices in a large bowl. Drizzle with dressing. Gently toss to combine.
- Divide salad among serving plates or on a large platter. Sprinkle with fetta and almonds. Serve with crusty bread.
