Jazz up weeknight meals with this tasty side salad.

  1. Separate the leaves of 2 witlof and thinly slice. Combine with 50g baby rocket and 3 thinly sliced radishes in a bowl.
  2. Whisk 2 tablespoons extra virgin olive oil, 1 tablespoon white balsamic vinegar and 1/2 teaspoon Dijon mustard in a small bowl. Season.
  3. Crumble 100g gorgonzola over the witlof mixture. Sprinkle with 2 tablespoons toasted walnuts. Drizzle over the dressing.
