Use the leftover turkey from your Christmas roast for this recipe.
- Add enough oil to a large frying pan to reach a depth of 1cm and heat over medium-high heat. Add half the wonton wrappers and shallow-fry for 30 seconds each side or until golden brown and crisp. Use a slotted spoon to transfer fried wonton wrappers to a plate lined with paper towel. Repeat with the remaining wonton wrappers, reheating oil between batches.
- To make the lime chilli dressing, combine the sweet chilli sauce, lime juice, oil and garlic in a screw-top jar and shake until well combined.
- Combine the baby Asian greens, watercress, coriander, basil, mint, onion, capsicum, snowpea sprouts and turkey in a large bowl. Pour the dressing over the salad and gently toss to combine.
- Spoon the turkey salad among serving plates and sprinkle with fried wonton strips. Serve immediately.
