Use the leftover turkey from your Christmas roast for this recipe.

  1. Add enough oil to a large frying pan to reach a depth of 1cm and heat over medium-high heat. Add half the wonton wrappers and shallow-fry for 30 seconds each side or until golden brown and crisp. Use a slotted spoon to transfer fried wonton wrappers to a plate lined with paper towel. Repeat with the remaining wonton wrappers, reheating oil between batches.
  2. To make the lime chilli dressing, combine the sweet chilli sauce, lime juice, oil and garlic in a screw-top jar and shake until well combined.
  3. Combine the baby Asian greens, watercress, coriander, basil, mint, onion, capsicum, snowpea sprouts and turkey in a large bowl. Pour the dressing over the salad and gently toss to combine.
  4. Spoon the turkey salad among serving plates and sprinkle with fried wonton strips. Serve immediately.
