Gather family and friends, fire up the barbecue and enjoy what the warmer season has to offer.
- Combine half the oil, garlic, salt and cracked black pepper. Place the steaks in a large dish and pour over the garlic mixture, turning the steaks to coat. Cover and refrigerate for 15 minutes.
- Meanwhile, heat a barbecue grill to high heat. Drain steak from the marinade. Place on the grill and cook for 3 minutes each side (this will give a medium centre) or until cooked to your liking. Remove, cover and keep warm.
- Combine tomatoes, bocconcini, olives and basil in a serving bowl. Place remaining oil and vinegar in a small non-metallic bowl and whisk together. Drizzle over the salad and serve with the steak.
