Add zing to Thursday night with this tasty prawn salad, drizzled with tangy lemon mayo.
- Use a vegetable peeler to slice the cucumber lengthways into thin ribbons.
- To make the lemon mayonnaise dressing, whisk together the mayonnaise, lemon juice, sour cream and parsley in a small bowl. Gradually add the water, whisking until the mixture is the consistency of thickened cream.
- Place the prawns, cucumber, avocado, onion and lettuce in a large bowl and gently toss until just combined. Divide among serving bowls. Drizzle over the dressing to serve.
