Cooking Soups Bolognese sauce

Take some time to prepare this base recipe bolognese on the weekend to make midweek meals faster.

  1. Heat oil in a large saucepan over medium heat. Add onion, garlic, carrot and celery. Cook, stirring, for 5 minutes or until onion has softened. Add mince. Cook, stirring with a wooden spoon to break up mince, for 10 minutes or until browned.
  2. Add mushroom, sauce, soup and stock. Bring to the boil. Reduce heat to low. Simmer, covered, for 20 minutes or until slightly thickened. Remove cover. Simmer for 10 to 15 minutes or until thickened. Stir in basil. Allow to cool before refrigerating.
