Fancy a pancake but dont want to break your diet Try these lean white bean pancakes, topped with fresh fruit and maple syrup.
- Process the beans in the bowl of a food processor until smooth. Add eggs, 1 tbs maple syrup and vanilla. Process until well combined. Transfer to a large bowl. Sift over flour. Add milk and whisk until smooth. Set aside for 10 minutes.
- Heat a large non-stick frying pan over medium-high heat. Brush lightly with melted butter. Ladle two 1/4 cupfuls of batter into the pan. Cook for 3 minutes or until bubbles appear on the surface. Turn and cook for a further 1 minute or until light golden. Transfer to a plate and keep warm. Repeat with remaining batter and butter to make 8 pancakes. Top with strawberries, passionfruit pulp and remaining maple syrup
