Cooking Eggs Egg-free breakfast pancakes

Eggs a problem Not with this recipe. It uses water and a little oil instead of eggs to make delicious berry pancakes.

  1. Combine the flour, baking powder, bicarbonate of soda and sugar in a large bowl. Add the water, oil and vanilla and stir to combine.
  2. Heat a large non-stick frying pan over medium heat. Pour three 1-tablespoonsful quantities of batter around the pan. Cook for 1-2 minutes or until bubbles rise to the surface. Turn and cook for a further 30 seconds or until lightly golden. Transfer to a plate. Repeat in 7 batches with remaining batter to make 24 pancakes.
  3. Divide pancakes among serving plates. Top with mixed berries and drizzle with maple syrup.
