Pass these around at your next party as a quick and tasty finger food.
- Roughly chop eggs and place into a bowl. Add mayonnaise, and salt and pepper. Mash with a fork until well combined.
- Place a heaped teaspoonful of egg mixture onto each slice of pumpernickel. Top with a tomato quarter and sprinkle with chives. Serve immediately.
