Cooking Vegetarian Pea, mint and feta frittatas

For easy, tasty, vegetarian finger food, pass around a platter of these mini frittatas.

  1. Preheat oven to 190°C/170°C fan-forced. Grease two 12-hole, 1 1/2 tablespoon-capacity round-based patty pans.
  2. Make Basic frittata mix: Whisk eggs, cream, cheese and garlic together in a jug. Season with salt and pepper.
  3. Combine peas, mint and onion in a bowl. Spoon evenly into holes of prepared pan. Top with frittata mix. Sprinkle with feta. Bake for 10 to 12 minutes or until set. Serve.
