Cooking Meat Lime & chilli pork with snow pea & asparagus salad

Seasoned with spices and sweetened with honey, lean pork looks and tastes great on a bed of cool, crisp greens.

  1. Sprinkle both sides of the pork with the seasoning. Heat a non-stick frying pan over medium heat. Spray with olive oil spray to lightly grease. Add the pork and cook for 4-5 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover loosely with foil. Set aside for 2-3 minutes to rest.
  2. Meanwhile, cook the snow peas and asparagus in a saucepan of boiling water for 1-2 minutes or until bright green and tender crisp. Refresh under cold running water. Drain. Combine the snow pea mixture, cucumber and coriander in a bowl.
  3. Whisk together the lime juice, orange juice, vinegar and honey in a small bowl. Season with pepper. Divide the pork and salad among serving dishes. Drizzle over the dressing to serve.
