For a quick week night meal try these honey and balsamic pork chops served with a fresh pineapple salsa.
- Combine honey, vinegar, soy and garlic in a large bowl. Add pork and turn to coat.
- Heat oil in large frying pan on medium heat. Add pork and cook for 3 mins each side or until cooked through. Transfer to a plate. Rest for 5 mins.
- Combine pineapple, mint, chilli, onion, lime juice and peanut oil in a medium bowl. Season with salt and pepper. Serve pork with steamed rice, pineapple salsa and lime wedges.
