Cooking Fish Tomato, chilli and mackerel pizza

We love a sneaky shortcut! Simply use easy bought pizza bases to cook up these cheesy, chilli topped pizzas.

  1. Preheat the oven to 230C/210C fan forced. Heat 1 tablespoon of the oil in a large non-stick frying pan over medium heat. Add the onion. Season and cook, stirring occasionally, for 15 minutes or until caramelised.
  2. Meanwhile, place the oregano, garlic and remaining oil in a small bowl. Mix to combine. Place the pizza bases on 2 large baking trays. Spread the pizza bases with the oregano mixture to cover.
  3. Top the pizza bases with the onion mixture, mozzarella, tomato, mackerel, olives and chilli. Cook for 20 minutes or until golden and crisp. Sprinkle with rocket leaves and serve with lemon wedges.
