Get ready to 'wok' and roll with this quick and easy pork stir-fry.
- Place noodles in large heatproof bowl and cover with boiling water. Set aside for 1 min to soak. Use a fork to loosen and separate the noodles. Drain well.
- Meanwhile, heat half the oil in a wok or large deep frying pan over high heat. Stir-fry the pork, in batches, for 2-3 mins or until just cooked through. Transfer to a plate.
- Heat the remaining oil in the wok over medium-high heat. Stir-fry the onion for 2 mins or until soft. Add the garlic and vegetables and stir-fry for 2 mins or until just tender. Return pork to wok. Add noodles, hoi sin, soy sauce, lemon juice and 2 tbs water. Stir-fry for 2 mins or until heated through. Divide among serving bowls and sprinkle with spring onion. Serve immediately.
