We have created this succulent glazed pork and vegetable recipe just in time for dinner tonight.
- Preheat oven to 220°C. Place the sweet potato in a large baking dish. Sprinkle with ginger and drizzle with oil, and toss until sweet potato is well coated in oil mixture. Roast in oven for 25 minutes or until sweet potato is tender.
- Meanwhile, brush the pork with kecap manis. Place in a large glass or ceramic dish and cover with plastic wrap. Place in the fridge for 10 minutes to develop the flavours.
- Heat the extra oil in a large frying pan over medium-high heat. Cook the pork for 1 1/2 to 2 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 3 minutes to rest.
- Wipe the pan clean and place over high heat. Add the broccolini and water and cook, stirring, for 2 minutes or until bright green and tender crisp. Drain well.
- Divide the pork, sweet potato and broccolini among serving plates. Serve immediately.
