This tuna pilaf recipe is the perfect rice dish for weeknight dinners or workday lunches.
- Heat oil in a large saucepan. Add onion and cook over medium heat for 5 mins, stirring occasionally, until soft. Add rice and cook, stirring, for 1 minute, until grains are glassy.
- Add stock, cover tightly with a lid and bring to a simmer. Reduce heat to low and cook for 10 mins, then uncover briefly and fold through peas and corn. Cover and cook for another 10 mins. Turn off heat and stand, still tightly covered, for 5 mins.
- Drain tuna and flake with a fork. Gently mix through the rice, along with parsley, and serve immediately.
