Cooking Vegetarian Tasty vegie pilaf

A vegetarian Moroccan pilaf that includes tasty sultanas, raisins, almonds and fresh tomato slices.

  1. Heat oil in a large saucepan on medium. Cook onion for 5 mins until soft. Add spice mix and stir for 1 min until fragrant. Add vegetables and cook for 3-5 mins until tender.
  2. Stir through rice, 1/4 cup of water, almonds and sultanas and cook for 1-2 mins to heat through. Remove from heat and stir through tomato.
  3. Serve pilaf in bowls topped with coriander and extra toasted almonds.
